One form of knife making is to cut out the basic shape from a piece of sheet steel and cut it, grind it, shape it, and turn it into a knife. Here are a couple examples of some of what I've done.

Both of these knives pictured above were cut out and shaped from steel plate. The top knife, shaped after the kopesh style, was a thicker sheet that was forged and drawn out somewhat, while the other knife was cut  from a thinner plate, somewhat remeniscent of a japanese style kitchen knife.
